Sauce Ingredients:
1/2 cup chicken broth
1/4 cup no sodium soy sauce/tamari sauce or coconut aminos
1 tbsp honey
1/2 tbsp sesame oil
1 tsp rice vinegar
1 1/2 tbsp corn flour
Stir Fry Ingredients:
1 tsp olive oil
1 pound chicken, cut into bite-sized pieces
1 tbsp minced ginger
2 tsp minced garlic
1 red onion, finely sliced
1/2 red bell pepper, finely sliced
1/2 orange bell pepper, finely sliced
Instructions:

Combine all of the ingredients brewing for the stir fry sauce in a bowl.

Heat the olive oil over a low-medium heat.

When hot add the ginger, garlic and red onions. Sauté for a few minutes.

Next, add the remaining veggies and sauté for a further few minutes.

Add the diced chicken and cook for 7 -9 minutes.

Next, pour in the stir fry sauce and stir fry for 1 minute.

Serve over noodles or rice.
