What has 5+ veggies, is kid-approved, and is the perfect cozy comfort food? If you said anything other than this Homemade Minestrone recipe, you'd be wrong. This recipe is perfect for when you've got some extra veggies in your fridge, and want to add more vegetables to your little ones' meals.

Ingredients:
🍲 2 tablespoons olive oil
🍲 ½ yellow onion, diced
🍲 1 teaspoon minced garlic
🍲 2 cups carrots, sliced
🍲 2 cups celery, diced
🍲 2 cups diced butternut squash
🍲 1 teaspoon salt
🍲 ½ teaspoon pepper
🍲 1 15 ounce can of diced tomatoes
🍲 1 15 ounce can cannellini beans, drained
🍲 8 cups vegetable stock
🍲 1 pound ditalini pasta
🍲 1 bay leaf
🍲 4 cups spinach
🍲 Parmesan cheese, for topping
Instructions:

Heat a large pot over medium heat.

Add the olive oil, and once hot, add the onion and garlic.

Then, add the carrots, celery, and butternut squash. Season with salt and pepper.

Stir and sauté for about 10 minutes.

Then, add in the diced tomatoes, beans, vegetable stock, pasta, and bay leaf.

Bring the mixture to a boil.

Then, lower to a simmer. Continue simmering until the pasta is tender.

Add in the spinach and stir until it wilts.

Top with shredded parmesan. Enjoy!
