How to Make Potato Pancakes Using Leftover Mashed Potatoes:

  1. In a bowl, combine the leftover mashed potatoes, minced garlic, black pepper, salt, scallions (if using), flour, and milk.
  2. If the mixture is a little bit too wet, add some more flour — if it is too dry, a splash of milk.
  3. Using a tablespoon, scoop out about 2 tbsps of the mixture, roll into a ball, and then flatten into a pancake shape.
  4. Heat the oil in a frying pan over low - medium heat and cook until golden and crispy on both sides.

Serve and enjoy!
