Ingredients:
🥔 2 large potatoes, peeled and chopped into cubes
🥔 1 medium-sized carrot, peeled and chopped into small pieces
🥔 1/2 zucchini, diced into small pieces
🥔 1 tsp oregano
🥔 1 tsp basil
🥔 1 1/2 tbsp olive oil
🥔 1 tsp minced garlic
Instructions:
1. Preheat your oven to 350°F / 180°C and line a a baking tray with parchment.
2. Add the chopped veggies to the baking tray.
3. Drizzle over the olive oil and spices. Mix to combine, ensuring that all of the veggies are well coated.
4. Bake for 35-40 mins, until the veggies are cooked through and tender.
5. Serve and enjoy!
