This fresh and vibrant pasta dish comes together so quickly and is loaded with flavor!

Ingredients:
🫛 1 onion, finely diced
🫛 2 tsp garlic
🫛 1 cup frozen or fresh peas
🫛 ½ cup milk
🫛 ½ cup ricotta cheese
🫛 1 lemon, juiced and zested
🫛 ½ cup parmesan cheese
🫛 ½ tsp black pepper
🫛 1 cup pasta
Instructions:

Cook the pasta according to the packet instructions.

Heat the oil over a low-medium heat and when hot add the onions and sauté for a few minutes.

Add the garlic and cook for another two minutes.

Add the milk, ricotta, parmesan and stir to combine.

Then pour in the peas, black pepper, lemon zest and juice. Simmer for a few minutes.

Add the cooked pasta, stir to combine.

Enjoy! This can be stored in the fridge in an airtight container for two days.
