These quick and easy burrito bowls are packed with flavor and come together so quickly! Serving the burrito bowl deconstructed can encourage your little ones to explore and try new foods at their own pace!

Ingredients:
🌯 1 pound chicken breast, diced
🌯 2 tbsp olive oil
🌯 1 tsp paprika
🌯 1 tsp ground cumin
🌯 1 tsp oregano
🌯 1/4 tsp black pepper
🌯 2 tsp minced garlic
🌯 Salt to taste (omit for babies)
🌯 1 cup white rice
🌯 2 cups chopped romaine lettuce
🌯 1 can canned corn
🌯 1 cup canned black beans, rinsed and drained
🌯 1/2 cup sour cream
🌯 1 avocado, diced
For the salsa:
🧅 1/2 red onion, finely diced
🌿 A handful of cilantro, finely chopped
🍅 1 large tomato, finely diced
🍋 1/2 lemon
🧂 Salt (omit for babies)
Instructions:
1. Combine the chicken in the olive oil, paprika, cumin, oregano, garlic, black pepper and salt. If you have time, leave to marinate for a few hours.
2. Cook the rice according to the packet instructions.
3. Combine the onion, cilantro and tomatoes to make the salsa. Squeeze over the lemon juice and salt, stir to combine.
4. Heat a pan over medium heat. When hot, add the chicken and cook for 7-8 minutes on each side until well cooked.
5. Assemble the burrito bowls. Add the lettuce, sweet corn, black beans, cooked rice, avocado, salsa, sour cream and chicken to the bowl.
6. For adults, you can add some jalapeño peppers!
