Cheesy Broccoli Rice Casserole 🧀🥦

This creamy, cheesy, and oh-so-delicious cheesy broccoli rice casserole is perfect for any occasion. Whip it up with just 10 minutes of prep and 40 minutes in the oven.

Cook Time: 40 minutes


1 tablespoon olive oil
1 yellow onion, diced
2 heads of broccoli, chopped into florets
1 ¼ cup vegetable broth, divided
1 tablespoon flour
2 ½ cups shredded cheddar cheese, divided
2 cups cooked brown rice


1. Preheat oven to 350F.
2. In a large oven-safe skillet, over medium heat, add the olive oil.
3. Once hot, add the onion. Saute until translucent, about 8 minutes. Set aside.
4. Add broccoli and ¼ cup broth. Saute and steam for about 8 more minutes.
5. In a medium saucepan, add the remaining 1 cup of broth.
6. Bring heat to medium-high and add flour. Whisk to combine.
7. Once starting to thicken, add 2 cups shredded cheddar cheese to the broth flour mixture. Stir to combine until thoroughly melted.
8. Add cooked rice and cheese sauce to the broccoli and onion. Stir to combine.
9. Top with remaining ½ cup of shredded cheddar cheese.
10. Bake for 15 minutes.
