These protein rich, fully loaded nachos are so easy to make, 15 mins prep and 10 mins in the oven! You need to try this!

🧡 ½ large bag of tortilla chips
🧡 1 can black beans or ½ pound minced chicken
🧡 1 tbsp olive oil
🧡 1 tsp paprika
🧡 1 tsp cumin
🧡 1 tsp ground coriander
🧡 1 tsp garlic powder
🧡 1 tsp onion salt
🧡 1 cup grated cheese (Monterey jack or cheddar)
🧡 1 cup salsa
🧡 2 scallions, finely diced
🧡 ½ red onion, finely diced
🧡 Avocado, sliced
🧡 A handful of cilantro, chopped
🧡 Sour cream
Preheat your oven to 360F/180C.
Heat the olive oil in a large pan.
Rinse and drain the black beans (if using).
Cook the chicken or black beans for a few minutes and then add the paprika, cumin, coriander, garlic powder and onion salt. Cook for 7-10 minutes. (For the chicken you may need a few minutes longer, until it is all browned).
Spread half of the tortillas over the Bumkins Grip Plate.
Top with ½ the cooked minced chicken/black beans, ½ the salsa and ½ the cheese.
Repeat to form a second layer.
Bake for 10 minutes, until the cheese has melted.
Remove from the oven and top with the scallions, onions, cilantro, avocado and sour cream.
Serve and enjoy!
