Your Favorite Loaded Nachos 🧡

These protein rich, fully loaded nachos are so easy to make, 15 mins prep and 10 mins in the oven! You need to try this!

Serves: Family

Ingredients:

🧡 ½ large bag of tortilla chips
🧡 1 can black beans or ½ pound minced chicken
🧡 1 tbsp olive oil
🧡 1 tsp paprika
🧡 1 tsp cumin
🧡 1 tsp ground coriander
🧡 1 tsp garlic powder
🧡 1 tsp onion salt
🧡 1 cup grated cheese (Monterey jack or cheddar)
🧡 1 cup salsa
🧡 2 scallions, finely diced
🧡 ½ red onion, finely diced
🧡 Avocado, sliced
🧡 A handful of cilantro, chopped
🧡 Sour cream

Instructions:

  1. Preheat your oven to 360F/180C.

  2. Heat the olive oil in a large pan.

  3. Rinse and drain the black beans (if using).

  4. Cook the chicken or black beans for a few minutes and then add the paprika, cumin, coriander, garlic powder and onion salt. Cook for 7-10 minutes. (For the chicken you may need a few minutes longer, until it is all browned).

  5. Spread half of the tortillas over the Bumkins Grip Plate.

  6. Top with ½ the cooked minced chicken/black beans, ½ the salsa and ½ the cheese.

  7. Repeat to form a second layer.

  8. Bake for 10 minutes, until the cheese has melted.

  9. Remove from the oven and top with the scallions, onions, cilantro, avocado and sour cream.

  10. Serve and enjoy!
