This Egg Salad consists of only five ingredients. It is easy to make and delicious. The Egg Salad has finely diced spinach for extra nutrients and fresh herbs for great flavor. It pairs nicely with toast or when served as a wrap in pita bread, tortillas, or lavash.
Ingredients:
🥚 6 large hard-boiled eggs
🥚 1/4 cup mayonnaise
🥚 1/4 cup spinach, finely diced
🥚 1/4 cup cilantro or parsley, finely diced
🥚 1 tablespoon dill fronds, finely diced
Method:
- Dice the peeled eggs into chunks
- Add the mayonnaise and mix to combine (making sure to be gentle, so the eggs don’t break too much).
- Add the finely diced spinach, cilantro, and dill.
- Mix to combine. Taste, if desired, may add a little bit more mayonnaise.
Here I served it with heart-shaped toasts, along with diced pineapple and mango.
