Soul-Warming Eats: Chickpea & Lentil Stew

This stew is so delicious and full of warming flavors, perfect for cold days!

1 can chickpeas, drained
1 onion finely diced
3 garlic cloves, minced
2 tsp grated ginger
1 tsp paprika
1 tsp ground cumin
1 tsp ground coriander
1 can tomatoes
Salt to taste (omit for babies)
2 large sweet potatoes, peeled and diced into small cubes
1 cup red lentils rinsed and drained (ideally soaked for 3 hours
2.5 cups vegetable stock
Lemon juice to taste


  1. Add all of the ingredients, except the lemon juice to your slow cooker. Stir to combine.

  2. Cook on high for 4 hours.

  3. Squeeze in the lemon juice before serving. Enjoy!

  4. This can be stored in the fridge in an airtight container for up to 3 months.
