Ingredients:
1 can chickpeas, drained
1 onion finely diced
3 garlic cloves, minced
2 tsp grated ginger
1 tsp paprika
1 tsp ground cumin
1 tsp ground coriander
1 can tomatoes
Salt to taste (omit for babies)
2 large sweet potatoes, peeled and diced into small cubes
1 cup red lentils rinsed and drained (ideally soaked for 3 hours
2.5 cups vegetable stock
Lemon juice to taste
Instructions:

Add all of the ingredients, except the lemon juice to your slow cooker. Stir to combine.

Cook on high for 4 hours.

Squeeze in the lemon juice before serving. Enjoy!

This can be stored in the fridge in an airtight container for up to 3 months.
