Start your day off right with these delicious and nutritious Egg Bites!

These easy-to-make egg bites are packed with protein and flavor, making them the perfect breakfast for busy families. With just a few simple ingredients, you can whip up a batch of these bites in no time.

  • Cook Time: 20 minutes


  • 1 tablespoon olive oil
  • 2 cups spinach
  • 8 eggs
  • ½ cup cottage cheese
  • ¼ cup shredded mozzarella cheese
  • 1 15-ounce can artichoke hearts, drained & diced
  • 1 teaspoon salt
  • ½ teaspoon pepper

How to Make Egg Bites:

  1. Preheat oven to 350F. Spray a muffin tin with nonstick cooking spray.
  2. In a large skillet, over medium heat, add the olive oil. Once hot, add the spinach. Saute until all wilted. Remove from heat.
  3. In a large bowl, add the eggs. Using a whisk, stir to combine. Add the sauteed spinach, cottage cheese, shredded mozzarella cheese, diced artichoke hearts, salt, and pepper. Stir well to combine.
  4. Pour evenly into the prepared muffin tin.
  5. Bake for 20 minutes. Remove from oven and allow to cool for at least 10 minutes.
