Prep: 45 mins
Cook: 10 hours
Serves: Family
Ingredients:
8 cups whole milk
⅔ cup plain greek yogurt or use 1 sachet yogurt starter
Instructions:
-
In a heavy pot with a lid, heat the milk over a medium heat. Stirring often until the milk reaches 200°F. If a film begins to form, use a spoon to remove and discard.
-
Turn off the heat and allow the milk to cool to 135°F (this will take around 15/20 minutes).
-
When the milk has cooled, take out 2 cups of milk and add the plain Greek yogurt (or the yogurt starter) to the milk. Stir thoroughly.
-
Pour back into the remaining milk and stir to combine.
-
Pop the lid back on and wrap the pot in a large towel.
-
Preheat oven to 170°F/75°C and when hot, switch it off. Place the wrapped pot into the oven. Allow the yogurt to incubate for 10 hours, without opening the oven door.
-
Transfer yogurt to a container and enjoy! This can be stored in an airtight container in the fridge for 3-4 weeks.
