Recipe by: @my.little.food.critic

Prep: 45 mins
Cook: 10 hours
Serves: Family

Ingredients:

8 cups whole milk
⅔ cup plain greek yogurt or use 1 sachet yogurt starter

Instructions:

  1. In a heavy pot with a lid, heat the milk over a medium heat. Stirring often until the milk reaches 200°F. If a film begins to form, use a spoon to remove and discard.

  2. Turn off the heat and allow the milk to cool to 135°F (this will take around 15/20 minutes).

  3. When the milk has cooled, take out 2 cups of milk and add the plain Greek yogurt (or the yogurt starter) to the milk. Stir thoroughly.

  4. Pour back into the remaining milk and stir to combine.

  5. Pop the lid back on and wrap the pot in a large towel.

  6. Preheat oven to 170°F/75°C and when hot, switch it off. Place the wrapped pot into the oven. Allow the yogurt to incubate for 10 hours, without opening the oven door.

  7. Transfer yogurt to a container and enjoy! This can be stored in an airtight container in the fridge for 3-4 weeks.
